The U.S. Meat Export Federation and Constellation Wines sponsored a Wine and Meat Tasting organized by the American School Foundation for an influential gathering of about 50 owners, presidents and general directors of the most important companies in Mexico, including Del Fuerte Corporation, Union Pacific, Walmart, the Presidente Intercontinental Hotel, Constellation Wines, the World Trade Center; Apple, Stanfeld Scott, Veramonte, Lilly Laboratorie and others.

The event was hosted at their home by Stephen R. Kelly, the U.S. Embassy deputy chief of mission, and his wife. Kelly introduced USMEF Retail Marketing Manager Gustavo Castaño, who discussed the organization’s mission and promotional activities in Mexico.

Besides cooking and serving an appetizing array of snacks, USMEF Chef Ricardo Ornelas explained their preparation and their relationship with the accompanying wines. A Talus Pinot Grigio white wine was served with delicious U.S. pork snacks which complemented each other due to the low acidity of the wine and the flavors of the marinade — miso, sake and ginger.

Chef Ornelas also served U.S. beef snacks with two red wines, an Estancia Cabernet Sauvignon and a Blackstone California Merlot. The pleasant fruity aroma and flavor were the perfect accompaniment for marinated U.S. beef broiled with the chef’s secret sauce.

The American School Foundation, one of the most important private schools in Mexico City, is an academically rigorous, international, university preparatory school, which offers students from diverse backgrounds the best of American independent education. In all aspects of school life students are encouraged to love learning, live purposefully and to become responsible, contributing citizens of the world. The school’s new president and executive director, Dario A. Cortes, Ph.D., talked about modernization plans for the institution and its mission to continue preparing leaders in Mexican society.

USMEF events such as the Wine and Meat Tasting help position U.S. beef and pork items as high-quality products used by trend-setting chefs with good potential for profit.

The U.S. Meat Export Federation is the trade association responsible for developing international markets for the U.S. red meat industry and is funded by USDA, exporting companies, and the beef, pork, corn, sorghum and soybean checkoff programs.
