Singapore Restaurant Training to Include
USMEF Culinary Program

The Restaurant Association of Singapore (RAS), whose members include the most influential members of the Chinese restaurant trade in Singapore, has decided to include the USMEF program module in its curriculum for chef training at its culinary center.  The USMEF culinary module includes cooking instructions focused on the top blade (flat iron) muscle cut.

In November 2002, USMEF’s Sabrina Yin conducted a top blade muscle cooking demonstration for 38 RAS board members and training center instructors at the RAS culinary center, Zhu Kuai Zi Restaurant. The RAS members were shown both western and eastern-style preparation of the top blade muscle by Ms. Yin. Two instructor-chefs also performed an on-site cooking demonstration using the top blade muscle in traditional eastern-style dishes, following USMEF module guidelines. RAS participants responded enthusiastically about the top blade dishes they sampled, and wished to include the program in future training. 

RAS will now incorporate the USMEF module on culinary preparation of the U.S. top blade muscle in their 2003 semester curriculum.
