U.S. Lamb Promoted to Academic Culinary Community in Guatemala

USMEF partnered with the School of Gastronomy at Mariano Gálvez University in Guatemala City to bring specialized training on U.S. lamb to its culinary professors. During an onsite workshop, U.S. lamb rack was promoted as a versatile ingredient in the creation of diverse and innovative local dishes. Funding for the workshop was provided by the American Lamb Board.

U.S. lamb exports to Guatemala have rebounded since 2022, reaching 34 metric tons valued at $268,000 from Jan.-Nov. 2024. USMEF Central America Representative Lucia Ruano reports that U.S. lamb is making inroads into fine dining establishments in Guatemala City and can also be found in select gourmet food stores.
