U.S. Beef Prepares For Change In Market

A USMEF seminar called “Change,” signifying the market in Taiwan in upcoming years as U.S. beef prices rise due other Asian markets reopening, discussed ways to continue providing high quality U.S. beef by developing less expensive cuts.

Almost 100 different restaurants were polled to gather information for use as USMEF evaluates future market trends. U.S. beef chuck-eye roll has been successfully introduced to leading food service owners, managers and chefs of different cuisines in Taiwan. USMEF wants to find other cuts that have this kind of potential.

Last week, USMEF conducted a seminar in cooperation with the Beef Innovations Group at Colorado State University for U.S. packers and processors to explore new ideas in using the U.S. beef chuck and round cuts. The success of U.S. beef chuck flap tail and other findings from the seminar in Taiwan were discussed. A group brainstorm followed, producing new ideas that will be tested to see if uses for these cuts can be identified for international markets like Taiwan.
