USMEF Indonesian Chef Training

USMEF-ASEAN conducted one in a series of two-day intensive training sessions June 26– 7, for eight chefs and one importer from Bandung, Indonesia at the USMEF test kitchen in Singapore. USMEF staff demonstrated cooking and cutting of U.S. top blade muscle, beef shortribs, heel muscle and rib finger.  A total of 11 recipes were developed for the participants. The session also included other foodservice management modules and visits to trend-setting restaurants in Singapore. Another chef training session is planned for July 20 in Surabaya, Indonesia

In the past chef training sessions have convinced several major Jakarta hotels to feature U.S. beef short rib recipes and top blade muscle and steak cuts.

USMEF also sponsored a team-visit to the U.S. in June. Eleven Indonesian importers plus agricultural staff from the U.S. Embassy in Jakarta visited beef plants and met with U.S. beef traders.

Indonesia banned imports of cattle and related products from 19 European countries, Japan and Israel as an apparent precaution against bovine spongiform encephalopathy (BSE) on June 28. Indonesia had imported a small amount of beef from Ireland and milk and milk-products from France, Belgium and the Netherlands.

The recent performance of Indonesia’s currency, the rupiah —  it dropped to 8,840 against the dollar on July 2 from 8,715 on July1 — has not helped U.S. exporters.

The Export Newsline is on vacation this week to commemorate American Independence Day. There will be no daily news stories at www.usmef.org on July 4 and 5, but our industry news coverage will resume July 8. The U.S. and international staff wish USMEF members a happy, safe and prosperous Fourth of July.
